Not possible to atone for your own sin because you would have to die....eternally....so you would not be allowed to live eternally....so something else had to die that was greater than eternal and greater than infinite numbers we commonly understand, hence God's Son.
The reason for this tremendous penalty is because God's laws are very demanding if transgressed. The penalty for mischief is eternal life for eternal death. Or life for life.
What is Yom Kippur all about than, surely Jewish understand this?
Every day a sinner confessed his sins unto a pet animal before a priest and killed the pet animal while confessing his sins, the priest took some of the blood and placed in on the altar in the holy place, a place the sinner could not go. So the blood transferred local daily sins into the tabernacle.
Than once a year on the day of atonement, the High Priest ONLY could make a sacrifice for all the sins of Israel, and cleanse the tabernacle from confessed sins; this is done by taking that blood into the MOST HOLY place and sprinkling it on the mercy seat of the ark, this is the only time a person could enter the most holy place and live, behind the curtain, where God dwelled.
Once this atonement was done, people listened for silver bell sounds the priest was yet alive, meaning the sins of all Israel was atoned for by the blood offering, the priest than came out and confessed the sins unto the scapegoat, who was led away to die of natural curses.
The type was played out many times over the years and clearly became Jewish in the Torah. SO please explain how the blood sacrifice does not atone for the sins of all the people saved by God.
The scape goat represented Satan, who is the ultimate mischief maker that originally spoiled the human procreative process, after Adam and Eve sinned.

Love is a river a dam fed you some Clear was it's water traditionally done.
This poem is not talking about a dam controlling the flow of a river, ONLY. What in the world would you limit poetry to just one picture and one story telling?
However to agree with you a dam does control a river and release the water flow gradually and with control . But that is not the only poetry story from this poem.
The dam is a simile of a husband and their is also a wife, and the river is a simile of love. The story says the husband stores up the love in the wife, releasing her love with control and gradual for flowing in the house.
This is why the breast in Hebrew is masculine because the flow from the feminine breast is controlled and filled by the dam in her life. Notice I use both stories together, but also each story separately. That is how poetry works.
Sure I get humans are guardians of the laws of God. But you miss out on the other story. Angel cherubs are also guardians of the laws of God. They were created for this purpose also.

But Jesus also chose animals for sin-offering, and for this the animal has to die. Why?
The penalty for mischief is life for life, implying one must die. Ge 3:15 And I will put enmity between thee and the woman, and between thy seed and her seed; it shall bruise thy head, and thou shalt bruise his heel.
You quote this alot, but it means the SON of God will be bruised first and later the SON of GOD will trample the heel of the mischief maker last, allowing Him to die for mischief done to humans.

That is a moral judgement from the command, NO WOUNDING. Once Satan managed to get Adam and Eve to sin, the humanity inside the womb was wounded.

It was not possible to life forever any more ( not because they couldn't life, they could eat the tree of life , but because they missed the LAW, and thus sinned. God's laws are immutable and cannot be undone. The penalty to wound somebody is to end your living. (But since the womb is compromised, so is the whole of humanity because of the mischief) The only way to recover a dying person from that penalty is to substitute eternal dying with eternal living, something GOD had to do, since no creature is immortal to begin with.
